Huzzah for the Truth Teller! Women in this country have been over-celebrated for too long. Just last night there was a story on my local news about a “missing girl,” and they must have dedicated seven or eight minutes to “where she was last seen” and “how she might have been abducted by a close family friend,” and I thought, “What is this, the News for Chicks?” Then there was some story about Hillary Clinton flying to some country because she’s secretary of state. Why do we keep talking about these dumdums? We are a society that constantly celebrates no one but women and it must stop! I want to hear what the men of the world have been up to. What fun new guns have they invented? What are they raping these days? What’s Michael Bay’s next film going to be?

When I first set out to ruin SNL, I didn’t think anyone would notice, but I persevered because—like you trying to do a nine-piece jigsaw puzzle—it was a labor of love.

I’m not one to toot my own horn, but I feel safe with you, jerkstore, so I’ll say it. Everything you ever hated on SNL was by me, and anything you ever liked was by someone else who did it against my will.

Double Trouble: Cheesecake-Stuffed Carrot Cake Recipe

Carrot Cake

3 cups all-purpose flour
3 cups granulated sugar
1 teaspoon salt
1 tbsp baking soda
1 tbsp ground cinnamon
1 1/2 cups canola oil
4 large eggs, lightly beaten
1 tbsp vanilla extract
1 1/2 cups shelled walnuts, chopped
1 cup shredded coconut
1 1/2 cups pureed cooked carrots
1 small 8 oz. can of crushed pineapple, drained
1/2 cup walnuts for the top (optional)

For the Cheesecake Layer

2 oz. white chocolate, chopped
16 oz. cream cheese, room temperature (2 packages)
1/2 cup + 2 tbsn. sugar
1 tablespoon flour
2 eggs, room temperature
1 teaspoon vanilla
1 tablespoon heavy cream

For the Frosting

8-oz cream cheese, room temperature
1 1/4 cups marshmallow creme (7-oz)
1 tsp vanilla extract

Procedure

Prepare the carrot cake layer. Preheat oven to 350 degrees F. Grease two 9 inch cake pans. Line the bottoms with parchment paper. Peel and cook carrots until a fork easily can be poked in to them. One small bag of full sized carrots should yield about the right amount of pureed, cooked carrots. Drain the carrots and purree while still warm in a blender or food processor until they are smooth. Measure out 1 1/2 cups of the carrot puree and set aside.

Sift dry ingredients into a bowl. Stir dry ingredients together with a whisk to combine well. Add oil, eggs and vanilla. Beat well for about 2 minutes. Fold in walnuts, coconut, carrots and pineapple. Pour equal amounts of batter into each pan. Set in the middle of the oven and bake for about 50 minutes or until edges have pulled away from sides and toothpick inserted in middle comes out clean.

Remove from oven and let sit in pans 10 minutes. Turn out onto a rack and cool completely.

Prepare the cheesecake layer. Preheat the oven to 350 degrees F.

Melt the white chocolate, set aside to cool slightly.

In a large bowl using an electronic mixer, mix the cream cheese on low speed until creamy. Add the sugar and mix slowly until smooth. On low speed, mix in the flour. Turn off the mixer and scrape down the bowl and beater with a rubber spatula. Add one egg at a time, mixing well after each addition, scraping the sides of the bowl. Mix in the vanilla and cream until the mixture is smooth. Using a large spoon, stir in the melted white chocolate until incorporated.

Pour the batter into a parchment paper lined 9-inch spring form pan. Bake for about 30 minutes or until the center is set when you slightly shake the pan. Allow to cool before removing from the spring form pan. Allow to cool completely before assembling the cake.

While you’re waiting for the cakes to cool, go ahead and make the cream cheese frosting. Combine all ingredients in a medium bowl and beat with an electric mixer at medium-high speed until smooth and fluffy. Set to the side for once the cake is assembled.

ASSEMBLE IT ALL. Place your bottom layer of cake on the dish/ plate you will be serving it on with the leveled side facing up.

Spread a thin layer of cream cheese frosting on top – it doesn’t matter how messy it looks since it will be covered.

Transfer the cheesecake to the top of the cake, then spread another thin layer of cream cheese frosting on top of the cheesecake.

Top with the remaining layer of cake – leveled side down so that you have a clean surface. Use the rest of the cream cheese frosting to frost the entire cake.

Top with optional nuts or shredded coconut.

It’s 1:30 am. I have British Studies at 8:30 am. I can’t sleep because every time I close my eyes I think of my family and Brian and how much I miss them. It’s nights like this when I miss being at home the most. I wake up everyday here and just say to myself “you live in England” and I can’t believe this is really happening. In my most homesick of moments I just have to pause for a minute and realize that if I have to be homesick isn’t this one of the best places to be in? I’m going to London and Paris this weekend with Stephanie, if I can make it through two midterms this week… I am so blessed. Even though I miss everyone back home I just keep reminding myself that I get to be the person who says “I’ve been there!” whenever someone brings up England, Scotland, or any of the other amazing places I’m fortunate enough to go. I always envied those people never having ventured far from Kentucky, and now thank to the support of my friends, family, and teachers, I am one. Thank you all for everything you’ve done to get me to this point. I love you

Week Two

So I have made it two weeks in a foreign country away from Brian and my family. While I have had a few tearful moments, I am so proud of myself for how strong I’ve been. Of course it helps that I have made some awesome friends with some wonderful girls from UE who make me want to be social, get out of my room, and do things like go to a club in London at midnight (complete with fire-eaters and creepers). This new-found independence is so exhilarating because I’m sure I used to be this way, but somewhere along the way with the stressfulness of life I lost part of myself. I regained what makes me Shawna Faye Felkins. I laugh hard, cry hard, and love harder than I ever thought possible. I have fallen in love with England and it is a love I refuse to ever give up (although I would prefer to visit again with my honey.) I am so much more confidant here and I think that when I get back to the states my friends and loved-ones will be extremely happy to see how much I’ve grown. I love my life <3
